How to Make Tea...
(From green Goddess Herbals)
This recipe was found in an old, old recipe book that I have. The pages are yellow and cracked. Unfortunately, the cover is gone and can find no date.
"There is but one way to make good tea. The kettle must be filled with fresh water and be allowed to boil quickly. When the steam is coming from the lid and spout fill the teapot, which should be absolutely free of leaf or stain. Let the hot water stand in the pot two minutes, then pour it off. Allow one teaspoonful (measured) of tea for each person and one for the pot. Put the tea into the teapot and pour over just enough boiling water (the kettle must have been set back over the fire and kept boiling furiously) to cover it, so that it would form a sort of thick porrige. Put on the lid. Let the pot standon the kitchen table, not on the stove, and cover it with what is known as a cosey or wadded cover large enough to slip over the pot. Let the tea stand just five minutes. Then fill up the pot with boiling water, place it under the cosey again and let it stand, as before, anywhere, except on the stove, for ten minutes. The brew will be perfect, an altogether different drink from stewed tea." (phew! Thank goodness for teabags!)
